I just got word directly from the operator of The Big Cheese food truck that the truck is almost ready to start serving! A few tweets ago, they mentioned something about a Nov 15th opening. Today, they are going to have the Arlington health inspection which is usually the last step before being able to serve customers.  The Big Cheese is going to be meeting with the DCRA inspector to get the DC permit process going this week.

So, what will The Big Cheese be serving? One hint is that they will be getting their cheese from the Cowgirl Creamery.  Maybe it’ll be grilled cheese sandwiches?  With Mt. Tam slightly melted between two slices of bread? Yumm  🙂

Regardless of how they serve the cheese, using great ingredients is the mantra of the DC Food Truck 2.0. And, The Big Cheese is sure to be a hit.

– core menu of 6 grilled cheese sandwiches plus 2 weekly specials
– tomato soup + seasonal soup
– rustic bread from Lyon Bakery, tomato rosemary, sun dried tomato, multigrain
